I love blueberries baked in all the things. These Blueberry Bars are one of my favorites, they are easy, tasty and they feed a crowd so they are one recipe that we can never go wrong with.
The crumb topping really sets these off, with sweetness and contrast to the blueberry filling it makes the perfect pairing that you will come to love.
If I haven’t mentioned before, blueberries are one of my favorite berries to bake with. There is so much that you can do with them that it is crazy and also tasty.
These bars are one of my favorites, but really do like bars. I love them because they are hand-held and really easy to eat and that is how I like to roll around here.

WHY THIS RECIPE WORKS:
- With easy pantry staple ingredients it is quick to put together.

- The crumb topping really gives it a nice contrast in texture and flavor.
INGREDIENTS NEEDED (FULL RECIPE AT BOTTOM):
All-purpose flour
Brown sugar
Granulated sugar
Cinnamon
Salt
Egg
Shortening
Blueberries
Cornstarch
Lemon juice
HOW TO MAKE BLUEBERRY BARS, STEP BY STEP:
- Preheat the oven to 350 F, line a 9×13 baking dish with parchment paper.
- Prepare the crust by stirring together the flour, brown sugar, white sugar, cinnamon and salt in a large bowl.
- Add the egg and mix well, then cut in the shortening until mixture is crumbly.
- Press just over half of the crust mixture into the bottom of the prepared pan.
- Prepare the filling by stirring together the blueberries, sugar, cornstarch and lemon juice until completely combined.
- Pour the filling mixture on top of the bottom crust.
- Use your hands to crumble the remaining crust mixture over top of the filling, then bake in preheated oven for 40-45 minutes, or until the filling is bubbly and the crust is golden.
- Allow to cool to room temperature, then chill in fridge for until cold, about 3 hours.
- Lift the bars out of the pan using the parchment paper, then slice and serve!
Look at those layers! The crust becomes the crumble topping so it is multi-purpose and we absolutely love that. My kids can’t get enough of these bars and they are one that we make a lot during the summer time.
DO I HAVE TO USE FROZEN BLUEBERRIES?
Absolutely not! You can use fresh blueberries if you wish. We usually keep frozen fruit around the house so it was easier for us to make these with frozen, but we use fresh when we can.
So whatever you have on hand will work and that is the beauty of this Blueberry Bar Recipe is that you can use either or.
CAN I MAKE A GLAZE?
A glaze would be perfect for this recipe. You can make a tasty powdered sugar glaze to drizzle over cooled bars. We do this but I like to add a little lemon juice to make it lemon blueberry flavor which is one of my favorites.
HOW TO STORE:
These bars can be stored in an airtight container in the refrigerator for up to 3 days. I do not recommend freezing because it will change the texture of the crunchy topping.
TIPS AND TRICKS:
- Frozen blueberries worked great in this recipe, however fresh ones would work too.
- If you don’t line the pan the bars will not lift out nicely but you can grease the pan and use a spatula to serve if you desire.
- The lemon adds a nice subtle sour to compliment the sweetness of the blueberry filling.
- These need to chill before slicing, I recommend at least 2-3 hours to let the filling set up.

- 2 Tbs cornstarch
- Juice of 1 lemon

- Cut in the shortening with pastry blender until mixture is crumbly.
- Press just over half of the crust mixture into the bottom of the prepared pan.
