Soft, chewy and full of chocolate chunks, these Chocolate Chunk Peanut Butter Cookies are an easy and tasty recipe that are full of chocolate and peanut butter flavors.
Cookies are my families favorite things in the world. Literally they don’t ever last long. Take these Peanut Butter Cookies for example. They lasted less than 24 hours before they were gone.
No joke.
I used to hate cookies, more or less because when I was younger my mom would always make cookies and they turned out more on the hard side.
I’m a soft cookie kind of girl, so I just never grew up eating them. Fast forward many many years and I met my husband, the biggest cookie lover on the planet.
Needless to say, cookies became a staple in our house and we make them regularly and of all different varieties. These Chocolate Chunk Peanut Butter Cookies are my families favorite ones of all.
INGREDIENTS DO YOU NEED:
- Butter
- Peanut Butter
- Sugar
- Brown Sugar
- Egg
- Vanilla
- Flour
- Baking Soda
- Baking Powder
- Salt
- Chocolate Chunks or Chips
These are easily staples that any baker has in their pantry. I’m not a fan of peanut butter alone but when it comes to desserts like these peanut butter cookies, I’m sold.
They are soft, chewy, fluffy and delicious. Now I know sometimes cookies turn out flat, these aren’t one of them. They spread just the perfect amount.
They are loaded with chocolate chunk goodness, one flavor combination that really goes well together is peanut butter and chocolate. I mean are you kidding?
HOW TO MAKE PEANUT BUTTER COOKIES:
- Preheat oven to 350.
- Line a baking sheet with parchment paper, set aside.
- In bowl of stand mixer or with hand mixer beat together you butter and peanut butter until smooth and creamy.
- Beat in your sugars until combined, about 2 minutes then add in egg and vanilla.
- In bowl whisk together flour, baking soda, baking powder and salt then slowly add it to your wet mixture until just combined.
- Fold in your chocolate chunks.
- Grab 2 Tbs of dough and roll into ball and place about 2 inches apart from one another and bake in oven for 9-10 minutes.
- Once done, remove from oven and press some more chocolate chunks into tops of cookies, let cool on pan for 5 minutes before removing to wire rack to cool completely.
These cookies are seriously so easy, that what I do really love about any cookie is that they whip up in a jiffy and they make a bunch.
Some of my favorite cookie recipes include:
We like to stray from the traditional peanut butter cookie recipe because, well as much as it’s a classic, we like to switch things up from time to time.
The addition of the chocolate chunks or chips to this recipe really gives it a delicious flavor that you cannot help but love. Or so I’ve been told…and been swept into as well.
TIPS AND TRICKS:
- Make sure your butter is really soft, but not melted.
- You can substitute chocolate chips for this recipe if you would like, otherwise buy a bar of semi-sweet baking chocolate and cut into chunks.
- To keep your cookies softer longer add a slice of bread to your cookie jar, the cookies absorb the moisture from the bread which in turns keeps them softer.
- Time is just an estimate, use your judgement on cookies, they are done when edges are slightly golden but center looks slightly underdone, this is when you will want to remove them.
If cookies are what you are craving than these Chocolate Chunk Peanut Butter Cookies are right up your alley! Trust me when I say that they will not last long and will be gobbled up immediately.
