Ok if you haven’t noticed we have been doing some of these fun TikTok trends we have been seeing out there. Cloud Bread is nothing new, it used to be popular in low carb and kept diets.
Now with all they hype about the size, colors and flavors it’s more of an aesthetic and flavorful thing rather than something you would eat while you were on a specific diet.
I love Cloud Bread, I always have, it’s super easy to bake up and we have made it for years. But now since this trend has gone viral we have tweaked our normal recipe to make it flavorful and even puffier.
With added chocolate chips to the top this Chocolate Cloud Bread is super tasty, light and fluffy and you really just want to keep taking bite after bite!

But this Chocolate version is not made to be diet friendly and I am not stating that it is, it is a fun and tasty recipe that we enjoy and there are so many out there that you can make!

- You can color it or flavor it too whatever you’d like.
- You can double the recipe to make more.
INGREDIENTS NEEDED (FULL RECIPE BELOW):
egg whites
granulated sugar
cornstarch
cocoa powder
See when I say that there are minimal ingredients to this Cloud Bread Recipe! I wasn’t lying. Seriously super simple to make and that is why we make it so much.
You know us around here, always trying to keep it simple. But sometimes the simplest recipes are the best and I cannot stop stressing that and I won’t stop stressing it!
HOW TO MAKE CHOCOLATE CLOUD BREAD, STEP BY STEP:
- In a bowl, beat the egg whites until they start to foam and add the sugar.
- Continue beating, then add the cornstarch.
- Continue beating with a hand mixer until you form a foamy mixture with stiff peaks.
- Add the cocoa last and mix it. Be careful not to deflate the foam consistency.
- Pour the mixture on a baking tray lined with greaseproof paper. Shape into rounds by smoothing with a spatula.
- Bake in the oven at 300 F degrees for 20 -25 minutes. Sprinkle with chocolate chips or sprinkles if you like.
If that doesn’t appear super simple, I don’t know what does. You can also use a stand mixer instead of a hand mixer for this if you’d like.
We switch back and fourth between the two and it doesn’t make any difference in the bread itself what equipment you do ouse.

WHAT IS CLOUD BREAD?
Since this is the same method it would be to make a meringue, let’s just call it a softer bake meringue that is magically turned into bread.
That is the best example that I can really give you when it comes to this recipe. A light and fluffy bread alternative recipe.
HOW TO STORE:
Cloud bread is best eaten once it comes out of the oven. It keeps its fluffiness best at that time, the longer it sits the more shrunken it will becomes.
If you do decide that you want to store it you can place it in an airtight container or ziptop bag and place it on the countertop for up to 1 day.
TIPS AND TRICKS:
- Make sure that you don’t get any yolks in with your egg whites, if you do the egg whites will not whip up properly.
- Slowly stream your sugar in while you are beating, this helps incorporate the sugar and helps it dissolve.
- You’ll want your cornstarch as free as lumps as possible and again slowly add it while beating.
- You can add your cocoa powder all at once because at this time you egg whites should be stiff enough it is just a matter of getting the chocolate flavor into the bread itself.
- We like to top ours with chocolate chips, it melts onto the top slightly giving it a more chocolate flavor.

Chocolate Cloud Bread
Ingredients
- 3 egg whites
- 2 Tbs granulated sugar
- 4 tsp cornstarch
- 4 tsp cocoa powder
Instructions
- Preheat the oven to 300 degreed F.
- Line a baking pan with parchment paper, set aside.
- In a bowl, beat the egg whites until they start to foam
- Slowly add the sugar until incorporated..
- Continue beating, then slowly add the cornstarch.
- Continue beating with a hand mixer until you form a foamy mixture with stiff peaks.
- Add the cocoa last and beat it in. Be careful not to deflate the foam consistency.
- Pour the mixture prepared pan. Shape into rounds by smoothing with a spatula.
- Bake in the oven for 20 -25 minutes.
- Top with chocolate chips or sprinkles if deisred.
