Chocolate and oatmeal, what can I say? These two go together so well. Especially in desserts. These Chocolate Oatmeal Bars are one of my favorite desserts ever.
They are super simple to put together, they take minimal ingredient and all they need is time too set up and you are ready to devour, how much better can it get?
As you all know judging by this website you know how much I love desserts, I love all kinds, but bars are really a favorite of mine because they are easy.
I love easy desserts, especially ones that can come in so many different styles and flavors, baked, no bake, you bake it! Bars are just an all around amazing recipe.

WHY THIS RECIPE WORKS:
- With minimal pantry staple ingredients this recipe whips up quickly.
- You can easily double it to feed more people.
- It is no bake so you don’t have to wait around!
INGREDIENTS NEEDED (FULL RECIPE BELOW):
Butter
Brown sugar
Vanilla
Salt
Quick-cooking oats
Chocolate chips
Peanut butter
Look at those easy ingredients! I mean the average baker most likely has all of these in their pantry or refrigerator just waiting to be used, I know that these are things that I keep on hand all the time!
HOW TO MAKE CHOCOLATE OATMEAL BARS, STEP BY STEP:
- Line an 8 by 8-inch baking pan with 2 pieces of parchment paper so the paper hangs over all 4 sides (so you can easily lift out the bars later).
- Add the butter and brown sugar to a medium saucepan over medium heat. Cook until the butter is melted and the sugar is dissolved, whisking occasionally.
- Whisk in the vanilla and salt.
- Stir in the oats and cook for 2 minutes over medium heat, stirring frequently.
- Transfer half of the oat mixture to the prepared pan and use a metal spatula to evenly spread it in the bottom of the pan.
- Melt the chocolate chips and peanut butter together in a microwave-safe bowl in the microwave or in a double boiler.
- Measure out 1/4 cup of the melted chocolate/peanut butter mixture and reserve it for drizzling on top.
- Pour the rest of the melted chocolate/peanut butter mixture onto the oats in the pan and spread it around evenly.
- Evenly sprinkle the remaining half of the oat mixture on top of the melted chocolate/peanut butter mixture. Drizzle the remaining melted chocolate/peanut butter mixture on top decoratively.
- Refrigerate until fully chilled, about 2 to 4 hours, before cutting.

WHAT KIND OF OATMEAL DO I USE?
For this you will need quick cooking oats. We don’t like to use old-fashioned oats for this recipe because it gives it too chewy of a texture. The quick cooking softens up when added to the melted ingredients.
WHAT KIND OF CHOCOLATE DO I USE?
We use semi-sweet chocolate chips for this. That is our flavor preference when it comes to these Chocolate Oatmeal Bars.
You can use any kind of chocolate chips that you’d like, semi-sweet or dark as well. We have dried it with both and they are both good, but the semi-sweet gives us the flavor that we like best.
You really just want to play around with the flavors in this especially with the chocolate as I really is a personal preference type of deal.
You do not want to skip that chocolate drizzle on top! Talk about an extra layer of yum! It is probably my favorite part of these bars to be honest.
I love anything drizzled in chocolate. You can also add some flaked sea salt if you like. I really like too add it sometimes as I really like the salty sweet combo.
Remember these are just suggestions, you can really do what you like. I love these Oatmeal Chocolate Bars the way that they are but sometimes we do play around with them and experiment.
But what baker doesn’t do that! So when we make these a lot of the time they are different, a lot of times they are the same. But all I know is that they are easy and the whole family flocks towards them.
We like to make a double batch also because they do get requested by some of my family to bring to functions and I’m always happy to make more, especially when there are leftovers involved.
HOW TO STORE:
We like to store these in the refrigerator as we don’t want them to get too warm that the chocolate would melt. Place in an airtight container or a ziptop bag and they will keep for up to 5 days.
These can also be frozen, I like to wrap each bar individually in plastic wrap and then place them all I in a freezer bag and place in the freezer. These will keep for up to 2 months.
To defrost just let them sit in the refrigerator overnight before consuming.
TIPS AND TRICKS:
- Quick cooking oats are needed for this, do not use old-fashioned oats.
- You can use any flavor chocolate chips you like, our preference is semi-sweet.
- These need time to set up in the refrigerator before slicing, this should be anywhere between 2-4 hours.
- You can easily double this batch to fit a 9″x13″ pan.
- Make sure that a you line you line your baking pan, these will stick easily and you need that liner to easily remove them.
- These can be frozen, see my tips above for that.
- We use creamy peanut butter for this, if you want chunks in your chocolate you can use chunky peanut butter.
