Drizzled in white chocolate and stuffed with a peppermint patty these Chocolate Peppermint Cookies are absolutely easy, minimal ingredients and delicious.
I love the holiday season. Giving, gathering, food and most of all the baking is really what makes it all so special. I adore all the holiday treats that people come up with especially these Chocolate Peppermint Cookies!
I absolutely love cookies, they have become one of my go-to treats that I love to make. There are just so many different variations of cookies that makes it so fun.
These Chocolate Peppermint Cookies start with a cake mix, then get a mini peppermint patty stuffed inside, rolled in sugar and then drizzled with white chocolate.
All the perfect holiday flavors in one place. I’m pretty much addicted to these things. Like I want them all day every day, but that probably wouldn’t be good.
But if you want a fun and easy cookie recipe to make that will surprise people it would have to be these Chocolate Peppermint Cookies for sure.

WHY THIS RECIPE WORKS:
- Starting with a cake mix, it is easy to whip up.
- You can double the recipe to make more for cookie exchanges.
- No weird ingredients are included, just normal pantry staples!
These Chocolate Peppermint Cookies are ones you will fall in love with, chocolate and peppermint go so well together, like are the perfect pairing and one of my favorites!
These cookies are so easy to make, I want to stress that! SO EASY! That is one reason that we love making “cake mix” cookies, is because they are easy.
But these are a little extra with them being stuffed with peppermint patties and rolled in sugar and drizzled with white chocolate.
HOW TO MAKE CHOCOLATE PEPPERMINT COOKIES, STEP BY STEP:
- Preheat oven to 350.
- Line a baking sheet with parchment paper, set aside.
- In bowl add your cake mix eggs and oil.
- With hand mixer beat your cake mixture until fully combined.
- Using a cookie scoop scoop dough into a ball.
- Spray your hands with non stick cooking spray and press ball into a flat round. Place one mini peppermint patty in the center of your round.
- Fold your cake mixture around peppermint patty and slightly flatten.
- Place sugar in bowl and roll your cookie ball into sugar.
- Place on prepared baking sheet and bake for about 15-20 minutes, remove from oven and let cool on wire rack for about 5 minutes before transferring to wire rack to cool completely.
- Melt you chocolate chips in 30 second increments in microwave until smooth.
- Place in piping bag and cut the tip off and drizzle over top of cookies, let set and serve.
See? Easy peasy! There is not a lot of steps that go into this cookie recipe so that is what I love. I love baking easy and difficult desserts but easy are my favorite.
Not saying that I’m always going to use a cake mix, because I’m completely on board with homemade recipes and it’s usually what I do, but sometimes we need a short cut.
There is absolutely nothing wrong with a short cut at all! Semi-Homemade is just as delicious as homemade, and these were still made with all the love.
WHAT KIND OF CAKE MIX DO I USE?
For this recipe any chocolate cake mix will do do! You can use, German chocolate, milk chocolate, chocolate fudge, etc. There are so many out there it’s hard to keep track.
We switch it up from time to time but the chocolate fudge is our favorite when we can find it, but use what you have on hand. It will not make a difference on how these cookies turn out.
WHAT PEPPERMINT PATTIES DO I USE?
For this Chocolate Peppermint Cookie Recipe you will want to use MINI peppermint patties, the regular side ones will not work and will not fit the cookie at all.
You can find them at your local grocer, we found ours at Walmart with no trouble, especially this time of year! We always stock up on them because we love eating them just the way that they are.
HOW TO STORE:
These cookies are good to be stored at room temperature. You can place then in a ziptop bag or a Tupperware container and they will stay good for up to 5 days.
We usually don’t freeze these cookies, but you can freeze them stored in an airtight container or freezer bag for up to 2-3 months, let defrost at room temperature.
OTHER WAYS TO DECORATE THESE COOKIES:
There are various other ways that you can decorate these cookies that we have before. Instead of rolling in sugar, place on baking sheet and sprinkle with sprinkles or once baked you can dust with powdered sugar.
Whatever you want to do I’m sure will be fabulous, this is our favorite way of decorating these cookies, it makes them stand out and gives them loads of flavor.
TIPS AND TRICKS:
- The dough can be stick, spray your hands with some cooking spray when shaping into rounds.
- Make sure you use MINI peppermint patties, otherwise they won’t fit in the cookie itself.
- You can easily double this batch to make more for gift giving.
- These cane be frozen, see my tips above.
- We use high quality chocolate chips to drizzle these with but you can use candy melts, almond bark or candiquick as well.
