Breakfast is the most important meal of the day and you can make that better by making this Cinnamon Roll Baked Oatmeal, a twist on a classic – this is a family-friendly hit!
I love me a good oatmeal recipe. I also love when it comes in baked form, if you have never tried baked oatmeal before you are absolutely missing out, it is so amazing.
We love cinnamon rolls for breakfast, but we don’t always like waiting on them because they do take a lot of time and effort so we make a lot of cinnamon roll flavored treats.
This Cinnamon Roll Baked Oatmeal is just one of them. Filled with your traditional brown sugar and cinnamon filling and topped off with a cream cheese icing, you really can’t go wrong.
It is like dessert but for breakfast, I mean who wouldn’t love that. I know that my kids are obsessed with this, I’m obsessed with this. This is just an all around great family recipe.
When I can make something that everyone likes it is a real winner, we have some pretty tough critics in this house so it’s a miracle when everyone loves the same thing.
So for breakfast this is one of our go-to recipes, it is super easy to throw together and it serves just enough for our family! So it has become a regular on our menu rotation.

WHY THIS RECIPE WORKS:
- This can easily be doubled to serve a larger family.
- You can top this with the glaze or with syrup.
- The filling really gives that kick of what a real cinnamon roll would taste like.
INGREDIENTS NEEDED (FULL RECIPE BELOW):
Milk
Eggs
Light brown sugar
Unsalted butter
Baking powder
Salt
Ground cinnamon
Vanilla extract
Old fashioned oats
Cream cheese
Powdered sugar
HOW TO MAKE CINNAMON ROLL BAKED OATMEAL, STEP BY STEP:
- Preheat the oven to 350°F. Spray an 8×8 baking dish with cooking spray, set aside.
- In a large bowl, whisk together the milk, eggs, brown sugar, butter, baking powder, sea salt, cinnamon, and vanilla until combined.
- Add the oats and stir until combined, set aside.
- In a small bowl stir together the brown sugar and cinnamon for the filling.
- Evenly add half of the oat mixture to the bottom of the baking dish. Sprinkle the filling all over.
- Top with the remaining oat mixture. Bake for 40-45 minutes until lightly browned.
- While the oatmeal is baking make the topping. Place the cream cheese and butter in a medium bowl and whip until smooth with an electric hand mixer.
- Add the powdered sugar a little at a time, mixing it in fully. Add the vanilla and mix for 1 minute, set aside.
- Let the baked oatmeal cool slightly, cut, and serve. Pipe or spread the cream cheese topping over each piece.
DO I HAVE TO USE OLD FASHIONED OATS FOR THIS?
Yes, since this will be baked for a longer period of time you will want to use old fashioned oats. It gives this Cinnamon Roll Baked Oatmeal the texture that you want and helps it hold it together.
CAN THIS BE DOUBLED?
Absolutely, if you are planning on serving a larger crowd just double this recipe and bake in a 9×13-inch baking dish. The time for baking might be slightly longer, just just check that it is set up and not liquidy.
DO I HAVE TO USE THE CREAM CHEESE ICING?
No, this is completely optional but highly recommended. The oatmeal itself is not overly sweet and the cream cheese icing is super addictive on this. But if you do not want to use it you do not have to.
You can use just maple syrup or another glaze of your choice. A simple milk and powdered sugar glaze would be wonderful as well. It definitely needs something to pour over the baked oatmeal.
HOW TO STORE:
This can be stored covered or in an airtight container in the refrigerator for up to 3-4 days.
This can also be frozen, I would recommend freezing without the icing and in individual pieces wrapped in plastic wrap and placed in a freezer container. This should keep frozen for up to 3 months.
Let defrost in the refrigerator overnight and you can reheat in the microwave until heated through, then you can glaze.
TIPS AND TRICKS:
- Make sure you use old fashioned oats and not quick cooking, they will get mushy.
