I love overnight breakfast, always have. I love that you can prepare them the night before and then you can just pop them in the oven in the morning and you are ready to go.

This Cranberry Overnight French Toast Recipe is super delicious, super easy and super tasty. It is one of of our favorite holiday breakfast recipes and make it every year.

We are kinda breakfast lovers over here and it doesn’t matter if it’s sweet or savory but the sake of this website being alllll the sweets you know that it is going to be a sweet breakfast.

I mean don’t get me wrong I love myself some bacon and eggs and all the savory breakfasts but I also love me some donuts, coffee cakes etc. 

Some of my other favorite overnight optional  sweet breakfasts include Make Ahead Blueberry Cream Cheese Danishes, Extra Large Cinnamon Rolls and Overnight Monkey Bread.

There is just something about overnight breakfast recipes that I love, I love that you don’t have to rush in the morning to make something and it’s all ready to just go for you.

WHY THIS RECIPE WORKS:

  • You can prepare it the night before and bake it in the morning.
  • There are so many other flavors that you can make this recipe with.

HOW TO MAKE CRANBERRY OVERNIGHT FRENCH TOAST, STEP BY STEP:

  1. Cream together the cream cheese and powdered sugar with a hand mixer until smooth. 
  2. Add the cranberry sauce and mix to combine. 
  3. Grease a 9×13 inch baking pan with cooking spray. Evenly spread the cream cheese mixture onto the bread slices on one side. Place the bread slices, cream cheese side up, into the baking dish overlapping each other, set aside.
  4. Whisk together the eggs, milk, heavy cream, granulated sugar, brown sugar, and vanilla until well blended in a large bowl. 
  5. Slowly pour the egg mixture on top of the bread slices. Cover with plastic wrap and place in the fridge overnight.
  6. Preheat the oven to 350°F. In a medium-sized bowl, add the flour, brown sugar, and salt, mix together. 
  7. Add the butter and using your fingers roll the butter and flour mixture together until well combined. The mixture will resemble clumpy wet sand. 
  8. Sprinkle this on top of the french toast. Bake for 45-60 minutes until golden brown and the center is still slightly jiggly.
  9. Let cool for at least 10 minutes and serve with powdered sugar dusted on top and maple syrup, optional.

How easy and good does this Overnight French Toast look? I mean wouldn’t you want to whip this up for Christmas morning? I know that I would and do!

I’m lucky enough that my kids love cranberries, and I love cranberries and this recipe is actually perfect. Using canned cranberry sauce really is a timesaver as well with this.

You could use your own homemade version if you want, but we like to take a quicker route and just use canned since it is easier for us. 

HOW TO STORE:

This needs to be refrigerated as it contains cream cheese, so once you have served wrap in foil and then place in the refrigerator where it will keep for 2-3 days.

You can freeze this recipe baked. Just let cool to room temperature and cover with foil and place in the freezer and it should keep for up to 3 months.

You then remove it from the freezer and defrost in the refrigerator, preheat your oven to 350 degrees F and cover and bake for 20 minutes until heated through.

WHAT KIND OF BREAD IS BEST FOR THIS FRENCH TOAST?

You can really use any type of bread that you like, we like using slices personally but some options that you have include:

  • Texas Toast
  • Brioche
  • White bread
  • Challah
  • French Bread

But we prefer that they are slices so get loaves and slice them or get pre sliced bread loaves and use those which is easier since you can control the size better.

It really is a personal choice on what you want to use for this recipe honestly. There is no right or wrong, we have even used smaller baguette slices for this Cranberry Overnight French Toast.

So whatever you feel comfortable with and what you have on hand will work or whatever your flavor preference is, it’s very versatile, you just want to fill that pan up.

One of my personal favorites with this recipe is the topping, the topping really gives it a nice little crunch that contrasts the custard bread filling.

The topping is optional, but we absolutely love it and I really thin that it makes this Overnight French Toast recipe so I highly recommend it!

TIPS AND TRICKS:

  • This can be frozen after being baked, see my tips above.
  • You can use whatever bread slices you like best.
  • We use canned cranberry sauce for this recipe but you can use homemade if you like.
  • We use whole milk but you can use any milk that you like.
  • We like to grate our butter as we feel it combines easier, but you can dice it as well.
  • The topping is optional but it is highly recommended.
  • Add a little bit of orange zest to this to give it an orange cranberry flavor.

Ingredients

For the cranberry filling:

  • 8 oz cream cheese softened

For the french toast assembly:

  • 12 slices brioche bread
