Easy Energy Bites

Packed full with peanut butter, oats, chocolate chips, honey and more, these Easy Energy Bites are a quick and tasty grab and go snack to fuel you up!

We love grab and go snacks. These Easy Energy Bites are ones that we have been making for years, they are full of flavor and are super easy to whip up.

The best thing about this recipe is that it is no bake! I love no bake recipes as they usually are quick, and I love quick recipes, the easier the better in my opinion.

We love to pack these Energy Bites in our kids lunches as a tasty snack that we won’t feel guilty about them having. Now I don’t feel bad giving them dessert, but these are a really good option.

These fuel you up and keep you satisfied and you don’t have to worry about how many you want to scarf down, which when it comes to me, it’s a bunch.

I honestly cannot resist this Easy Energy Bite Recipe as it’s become a staple around here and everyone has come to love and expect to have them around.

WHY THIS RECIPE WORKS:

  • With only 8 ingredients they quickly come together.
  • You can alter these to your flavor preference.
  • Easily double this recipe for larger families or gatherings.

These are perfect to bring to gatherings, we usually bring them to school functions like games when we work the concession booths, for some reason kids love these.

They don’t necessarily know that they are healthier, they just think they are rounded granola bars which they pretty much are and they just go nuts for them. 

I won’t complain about that, if kids love these then that is a good thing. Adults even more, my husband and I love to snack on these all day every day.

HOW TO MAKE EASY ENERGY BITES:

  1. Place all ingredients in bowl and stir to combined.
  2. Cover and replace in refrigerator for about 30 minutes to stiffen up slightly.
  3. Remove from refrigerator and shape into about 1″- 1 1/2″ balls, serve immediately or keep stored in refrigerator until ready to snack on.

WHAT MAKES THESE GIVE YOU ENERGY?

This is probably a question on everyones mind, why are these called Energy Bites? Well they are packed with whole food, fiber and protein. 

Between the oats, flaxseed and peanut butter you have a great combination of fuel for your body, so its one of those things that are perfect to grab along and snack on when you are feeling a little sluggish. 

They also fill you up super fast, so it doesn’t take too many of them to really satisfy your craving.

HOW TO STORE:

These should be stored in the refrigerator when not eating. They will stay good chilled for up to one week.

You can also freeze these Energy Bites. Place on a baking sheet lined with parchment paper and place in freezer for 1 hour until completely frozen. 

Remove from freezer and  place in a freezer bag and they should be good stored in the freezer for up to 3 months, defrost in the refrigerator before serving.

Trust me you’ll want to make these delicious little bites of heaven, if you are a granola or granola bar lover then these are perfect for you!

TIPS AND TRICKS:

  • We use mini semi-sweet chocolate chips in this recipe, but you can use regular, you can also switch them out for dark chocolate chips as well.
  • Chia seeds are a great addition to the mixture to incorporate another superfood in this recipe.
  • You can use sweetened or unsweetened coconut, it all depends on how healthy you want these energy bites to be.
  • You can use organic, natural or regular peanut butter, you can also use chunky peanut butter or almond butter for a different flavor as well.
  • These can be frozen, see my tips above on that.
  • Doctor these up to your favorite flavors, there is so much that can be added to these energy bites to fit your preference.

Ingredients

  • 1/2 cup peanut butter
