    Funfetti Ice Cream Bread

    With only 3 ingredents and minimal time this Funfetti Ice Cream Bread is a delicious and easy recipe that the whole family will love! Colorful, fun and tasty!

    If you’ve never tried Ice Cream Bread then you are really missing out. This was one of the first recipes I learned how to make way back in Home Economics!

    I mean if you are really just learning how to bake then this is the recipe that you need because you really cannot get any more simple than 2 pain ingredients and a third thats optional.

     How can you go wrong with 2 ingredients, or 3? You just cant! That is why we can’t stop making this Funfetti Ice Cream Bread. This is one recipe the kids love helping with.

    They really don’t need to help with it, they are old enough now that they just know how to make it so it is one that them and I both make all the time.

    We have used a variety of flavors in the past to create different types of bread, but this Funfetti version is one of our absolute favorites just because it’s simple and flavorful

    WHY THIS RECIPE WORKS:

    • With only 3 ingredients you can’t go wrong.
    • You can switch up your ice cream to create different flavors.
    • You can double the recipe to make multiple batches.

    INGREDIENTS NEEDED (FULL RECIPE BELOW)

    Vanilla ice cream
    Self-rising flour
    Rainbow sprinkles

    Ingredients needed to make Ice Cream Bread

    HOW TO MAKE FUNFETTI ICE CREAM BREAD, STEP BY STEP:

    1. Preheat the oven to 350°F. Line a standard loaf pan (8.5×4.5×2.5 or 9x5x3) with parchment paper or spray well with baking spray, set aside. 
    2. In a large bowl, stir together the soft ice cream with the flour until there are no dry patches left. 
    3. Add half of the sprinkles and fold them in to combine. 
    4. Pour the mixture into the prepared loaf pan and smooth out the top. 
    5. Pour the rest of the sprinkles on top evenly.
    6. Bake for 33-38 minutes until a toothpick inserted into the center comes out clean. A few crumbs stuck to the toothpick are okay, but if there is any wet batter it needs to bake longer. Let cool in the pan for 5 minutes. Transfer to a wire rack to cool completely, cut, and serve.

    How easy is this?! I mean how can you not want to make this recipe! Like just this of all the flavors that you can come up with! There are endless possibilitiies.

    This Ice Cream Bread has more of a texture like a pound cake rather than a bread and has just a nice sweetness from the ice cream so it is not overpowering.

    You can always add more flavor by adding some vanilla or other extracts of choice since this is made with vanilla ice cream, you can pretty much flavor it to what you like.

    We have used almond, strawberry, lemon among other extracts in the past with the vanilla ice cream to see what the flavors tasted like and we loved them all!

    But we still really enjoy this Funfetti Ice Cream Bread version the best. I’m a really colorful person and the kids love it so it just meshes well with our personalities.

    WHAT DOES ICE CREAM BREAD TASTE LIKE?

    Ice Cream Bread is a lightly sweetened bread, it doesn’t taste like a cake although it has more of a pound cake consistency. 

    You’d think by adding ice cream into flour you would have this super sweet bread, but it is nicely lightly sweetened and the addition of sprinkles adds a little more sweetness in this version.

    To sweeten it up more you can add extract like I mentioned above or spread it with jelly, jam or whatever you’d like. 

    If you are a fan of bread that is not overly sweet then this Ice Cream Bread is what you’ve been looking for. Of course the sweetness could change depending on the ice cream you use.

    If you use a fruit flavored ice cream it will sweeten it up more than a regular vanilla ice cream does. So think about what you are looking for before baking your Ice Cream Bread!

    HOW TO STORE:

    We love eating this bread right from the oven but if you have any leftovers you can store in an airtight container or ziptop bag at room temperature for up to 3 days.

    This can also be frozen. Bake according to directions and then let cool. Place in a freezer bag and the bread will last in freezer for up to 6 months.

    You can let defrost at room temperature before eating.

    TIPS AND TRICKS:

    • This does not make a super tall bread, so don’t be surprised that it is shorter.
    • You will want to use full fat ice cream for this, do not sub for low fat or low sugar ice cream.
    • You can flavor this with any ice cream that you like, we used vanilla for this recipe.
    • Change the flavor by adding some extract in with your mixture.
    • This can be frozen, see my tips above.
    • Make sure that your ice cream is very soft or completely melted, we want the batter to be smooth.
