I’ve always been a fan of Gooey Butter Cookies, we started making them many years ago and have decided that they are absolutely the best.
We are cookie lovers by nature, they are simple, adaptable and you there are so many different cookies out there that you can make, the possibilities are endless.
These Spiced Gooey Butter Cookies are quick and easy, start with a cake mix and are literally melt in your mouth soft. They are one of those cookies that you just absolutely cannot resist as hard as you try!
I’m a fan of soft and chewy cookies and I honestly think that you can not get any more soft and chewy than these unless you are just eating the dough itself.
Since it’s Fall I wanted to share our Spiced Gooey Butter Cookies with you! If you love spice cake then you will absolutely fall in love with these.
Mouthwateringly good, super simple and easy and they will absolutely become one of those recipes that are on your Fall rotation.

WHY THIS RECIPE WORKS:

INGREDIENTS NEEDED (FULL RECIPE AT BOTTOM):
Cream cheese
Unsalted butter
Egg
Vanilla extract
Spice cake mix
Powdered sugar
HOW TO MAKE SPICED GOOEY BUTTER COOKIES, STEP BY STEP:
- Preheat the oven to 350°F. Line sheet trays with parchment paper.
- In a large bowl, cream together the cream cheese, butter, egg, and vanilla until smooth.
- Add the cake mix.
- Mix cake mix in until combined with no dry patches.
- Place the powdered sugar in a bowl. Using a 1.5 tablespoon cookie scoop, roll the dough into balls with your hands and roll it in the powdered sugar.
- Place the cookies, 2 inches apart on the prepared baking sheets.
- Bake for 10-11 minutes until the bottoms are slightly brown.
- Let cool for 5 minutes on the sheet tray. Transfer to a wire rack to cool completely.
WHAT KIND OF CAKE MIX CAN I USE?
For Gooey Butter Cookies, there is no limit for cake mix options. You can use many varieties such as chocolate, yellow, white, strawberry or funfetti.
The end result for these cookies will be the same, gooey, buttery and literally perfect. So have fun and try new and different mixes. Spice cake mix is the perfect one for Fall!
DO I HAVE TO CHILL THE DOUGH?
You can chill the dough for these cookies if you’d like but it is not necessary. Chilling the dough will make it less sticky and easier to roll.
If you are concerned about rolling them, we like to just spritz our hands with a little cookie spray and it works like a charm!
But if you want them easier to handle then you can chill them for about 30 minutes to an hour.
HOW TO STORE:
Once cool, place Gooey Butter Cookies into an airtight container where they will keep at room temperature for up to 3 days. Or you can place them in the refrigerator where they will keep for up to 5-6 days.
These can also be frozen, to do this we like to place the baked cookies on a cookie sheet and freeze for about an hour. Then place in a freezer container or bag and they will keep frozen for up to 3 months.
These can defrost at room temperature or in the refrigerator before consuming.

- 15.25 ounce box spice cake mix
- ½ cup powdered sugar
