Creamy, fruity and absolutely delicious these Strawberry Cheesecake Bars are super easy, fun and are perfect for a spring treat!
Cheesecake…need I say more? Cheesecake is one thing that I’m absolutely in love with. It’s one thing that I’ve found out that I rock at making.
Everyone always asks me for my Classic Cheesecake Recipe because they love it so much. But when it comes to bars, Cheesecake Bars are some of my favorite around.
Baking with strawberries is one thing that I absolutely love to do. I love the flavor of strawberries in a variety of desserts.
WHY THIS RECIPE WORKS:
- They are handheld sized so you don’t need as much as a regular cheesecake to enjoy the dessert.
- Easy to find ingredients make these super convenient to whip up.
- The strawberries in this recipe enhance the flavor of the cheesecake itself.
These Strawberry Cheesecake Bars really are super simple to make. You can use pretty much any fruit that you want, we have done Lemon Raspberry as well and LOVE it.
It is a really versatile recipe and you don’t even need to add fruit if you don’t want, chocolate chips work well, sprinkles, Oreos, whatever you desire.
HOW TO MAKE STRAWBERRY CHEESECAKE BARS, STEP BY STEP:
- In bowl stir together graham cracker crumbs, sugar and butter until combined.
- Press mixture into a 9″x13″ baking pan lined with tin foil and bake in oven for 10 minutes at 325 degrees F.
- Meanwhile in large bowl add your cream cheese beat until smooth.
- Add in your sugar and vanilla extract and beat again until combined.
- Add in your eggs one at a time.
- Mix well after each addition and scrape down bowl to make sure everything is combined and creamy.
- Dice your strawberries and add them to the mixture.
- Fold in your strawberries until they are evenly distributed among the batter.
- Pour into prepared crust and bake in oven for 35-40 minutes until center is almost set, remove from oven and let cool completely then refrigerate for 4 hours to set.
How simple is this recipe? Seriously? There really are not a lot of steps to follow which I love, I hate complicated desserts unless I’m really craving them.
These Cheesecake Bars are just the perfect spring and summer treat that you want, especially if you are able to pick fresh strawberries.
CAN YOU FREEZE THESE BARS?
You absolutely can! Thats one thing that I love about cheesecake and cheesecake bars is that they are easily able to be frozen.
To freeze you’ll want to bake and cool as directed. What works best for us is to cut the bars and place them on a baking sheet and place them in the freezer.
Once they are frozen, you can wrap individually in plastic wrap then tin foil or you can place in a Tupperware container and they will store for about 3 months.
We like to wrap individually because it’s easier to take them out and have them be able to defrost that way.
HOW TO STORE CHEESECAKE BARS:
Cheesecake or Cheesecake Bars should not be left out at room temperature for more than 4 hours. The best bet for storing these is the refrigerator.
We keep ours in the baking pan, but you can remove from the pan and cut int individual servings and place in an airtight container.
Or you can just wrap the pan with some plastic wrap or tinfoil and keep them in the refrigerator where they should last about 3-4 days.

TIPS AND TRICKS:
- Beat your cream cheese before adding any other ingredients, this helps to prevent any lumps from forming.
- Adding in eggs one at a time helps blend a liquid into a fat and gives it time to combine at a rate better then adding them all in at once.
- Make sure you completely cool on counter before chilling.
- You can substitute any fruit that you like, or other mix ins that you desire.
- These can be frozen, reference above.

Strawberry Cheesecake Bars
Ingredients
Crust:
- 2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup butter melted
Cheesecake:
- 4 8 oz pkg cream cheese softened
- 1 cup sugar
- 2 tsp vanilla extract
- 4 eggs
- 2 1/2 cup strawberries + more for topping
- Whipped topping optional
Instructions
- Preheat oven to 325.
- Line a 9"x13" pan with tinfoil, set aside.
- In bowl stir together graham cracker crumbs, sugar and butter.
- Press mixture into prepared pan and bake in oven for 10 minutes.
- Meanwhile in large bowl beat your cream cheese until smooth.
- Add in your sugar and extract and beat again until combined.
- Add in your eggs one at a time, mixing well after each addition.
- Fold in 2 1/2 cups of your strawberries and pour into crust and spread evenly.
- Bake in oven for 35-40 minutes until center is almost set, remove from oven and let cool completely.
- Refrigerate for 4 hours to set, then cut into bars and top with whipped topping and sliced strawberries if desired.
