With notes of strawberry, oats, vanilla and almonds these Strawberry Oatmeal Bars are a fun and super easy recipe that is perfect for any strawberry lover.
I love a good bar recipe, these Strawberry Oatmeal Bars have always been one of my favorites. With various ingredients they are super easy to bake up and easier to devour.
Using strawberry jam in the middle it really makes this super saturated with that strawberry flavor but toned down with the oats, almonds, vanilla and the delicious glaze.
These bars are amazing warm or chilled and you can pretty much use any of your favorite jam recipe and turn this into any flavor Oatmeal Bar that you can think of.
Bar recipes are amazing to make, mainly for the fact that there are so many different versions and that is one reason as to why I love bars, they are endless.
If you love strawberries and oats then these Strawberry Oatmeal Bars are exactly the recipe that you are going to want to make, then you’ll want to keep them on your menu rotation.

WHY THIS RECIPE WORKS:
- All the ingredient flavors work so well together.
- You can change the flavor by switching up the jam in the center.
- These are ready in just over 30 minutes!
INGREDIENTS NEEDED (FULL RECIPE AT BOTTOM):
Old fashioned oats
All-purpose flour
Brown sugar
Baking powder
Cinnamon, optional
Vanilla extract
Salt
Butter
Sliced almonds
Strawberry jam
Powdered sugar
Milk or water
HOW TO MAKE STRAWBERRY OATMEAL BARS, STEP BY STEP:
- Preheat the oven to 350ºF and line an 8-inch square baking dish with parchment paper.
- In a large bowl combine the flour, oats, brown sugar, baking powder, cinnamon, and salt.
- Add the cubed butter and mix with your hands until crumbly.
- Set aside ½ of the oat mixture for topping, mixed with the almond flakes.
- Press with a spatula or your hands the remaining batter evenly into the bottom of the prepared baking dish.
- Add the strawberry jam and spread over the crust.
- Then crumble the reserved oat mixture over the jam.
- Bake for 25 to 30 minutes or until the topping is golden. Cool completely in the baking dish on a wire rack.
- Meanwhile make the vanilla glaze: whisk together the sugar, vanilla extract, and milk in a small bowl.
- Once completely cooled, remove from the baking dish, drizzle the vanilla glaze on top, cut and serve!
WHAT KIND OF JAM IS BEST FOR THESE?
You can use whatever brand you have on hand or your favorite. Even homemade jam would work. You can also use fruit preserves for this recipe, just use what is convenient for you.
You can also switch out the jam to make these bars a different flavor if you’d like.
MY JAM ISN’T SPREADABLE, WHAT SHOULD I DO?
If your jam is not soft enough to spread, pop it in the microwave for 30 seconds or until softened. This will make it easier to spread over the crust, but make sure that you don’t completely melt it.
CAN THIS RECIPE BE DOUBLED?
Absolutely, we made a smaller batch for this recipe because we were just serving ourselves but if you are going to a function or serving a larger family or crowd I would say double.
This can be made in a 9×13-inch pan, the baking time might just need to be upped a few minutes.
HOW TO STORE:
These can be stored in the an airtight container where they will keep in the refrigerator for 2-3 days.
They can also be frozen, place the unglazed bars on a baking sheet and freeze flat for 1 to 2 hours. Transfer bars to a freezer container and they will keep for up to 2 months.
To defrost, place in the refrigerator and then remove to countertop to come to room temperature and then you can glaze.
TIPS AND TRICKS:
- This recipe can easily be doubled.
