  • 2 cups granulated sugar
  • 1/2 cup white corn syrup
  • 1/2 cup cold water
  • 2 egg whites room temperature
  • 1 teaspoon vanilla extract
  • 24 whole pecans

  • Line baking sheets with parchment paper, set aside.
  • Add a candy thermometer to a medium heavy saucepan.
  • Heat sugar, corn syrup and water over medium heat without stirring until mixture reaches hard ball stage, 250-260 degrees F.
  • While the syrup is cooking, beat the egg whites until stiff peaks form.
  • When the sugar reaches temperature, remove from heat and very slowly pour into the egg white, whipping on high speed constantly.
  • Add vanilla and continue beating on high until the candy holds it shape, about 10-15 minutes. * see notes
  • Spray a cookie dough scoop or 2 spoons with cooking spray, then drop scoops of candy onto prepared baking sheets.
  • Immediately add whole pecan or other garnishes, if using.
  • Allow divinity to dry and harden for 6-8 hours or overnight.

  1. * The time will depend on your mixer. I found it best to beat on high speed for 5 minutes and then let the mixture and mixer rest for 2-3 minutes. Then repeat several times.
  2. You will need a candy thermometer for this recipe, you can easily buy one at Walmart for cheap.
  3. You can top this with anything that you like, or even mix in ingredients while whipping together.
  4. We add vanilla to this recipe but if you want a different flavor you can switch up the extracts.
  5. This candy needs time to set up at least 6-8 hours as it needs to harden, overnight is best if you can wait.
  6. This can be finicky to whip up on more humid days, so when making try to avoid making it at those times if you live in a warmer climate.
  7. These can easily be doubled to make a larger batch especially for gift giving.
